SPAGHETTI WITH SAUSAGE SAUCE

Sometimes you feel like pasta with a meat sauce, but don't have the 11/2 -2 hours needed to make a Bolognese or classic ragĂș. Here's a great substitute.

SAUSAGE SAUCE
(For 2)
Olive oil
2 large Italian pork and fennel sausages
3 Roma tomatoes, diced
2 cloves garlic, chopped
300 mls white wine
2 tablespoons tomato paste
Pinch of nutmeg
Salt
Pepper

Heat the olive oil in a saucepan over medium heat. Squeeze the sausage mixture from the casings into the pan. Break up the meat with a spatula or fork. Cook, turning frequently, until browned. Add the rest of the ingredients and cook uncovered until the sauce has reduced by about half and thickened, which should take no more than 30 minutes. That's it.
