Tuna is fish for meat eaters. Apart from the deep red colour, it has a robustness when charred that a carnivore would appreciate. The addition on ground chipotle chillies and organic cumin seeds and the searing in a pan over high heat just add to that meatiness. A dollop of fresh Willowbrae goat curd and salsa of black beans, jalapeƱo, tomato and avocado - and a squeeze of lime - to complete. A simple mesclun salad made for a disconcertingly healthy dinner.
