CARNITAS DE POLLO WITH ONION OIL AND FIVE SALADS

Ah, Mexico. How I miss you. How I miss your chickens. The first time I bought and cooked a chook from a market in Mexico City, I rediscovered a taste I remembered from childhood. I had completely forgotten that taste for 40 years, and here it was again! What was it? Chicken flavour. A richness and an aroma that's missing from chickens in Australia (although one of Carlo's own chooks from AC Butchery in Leichhardt, Sydney, came close). The five salads are cebollos en escabeche, mango, radish, yellow tomato & cucumber. Fresh as a late summer nor'easter off the ocean.
