HIRAMASA KINGFISH, ROASTED CORN, PURPLE CONGO MASH & CHIVE OIL
Hiramasa kingfish. A wonderful farmed yellowtail kingfish (called amberjack in some countries) from the deep, clear waters off the South Australian coast. Brilliant as sashimi, but equally at home seared as here. A very simple combination of sautéed local sweet corn, purple Congo potatoes and chive oil.
