FENNEL & RICARD RISOTTO

I had my first risotto in Mantova in 1982. It was made with Prosecco. It was delicious. I cooked my first risotto straight after returning from that trip. I have no idea how many I've cooked since then. I love risotto. Italian comfort food. Mind you, I think all Italian food is comfortable.
