MONKFISH WITH POTATO, PANCETTA & OLIVE VINAIGRETTE

Interesting critter, monkfish. Requires a bit more work than regular fish, cooks up firmer than a lot of fish - more like lobster - but isn't afraid of robust flavours. Not that this is overly challenging. It was going to be cooked in an Asian style of some kind, but turned out Mediterranean. That's the way it goes some times.
