Are bugs the greatest of all shellfish? Maybe, maybe not. Sure better than lobster or crayfish. Not quite as good as mud crab or blue swimmer crab, perhaps. I have to thank Tetsuya Wakuda for teaching me that really fresh shellfish is best barely cooked.
